Tasting Note:
The resting in wood here merely gives some aeration and allows the complex flavors of the mezcal to gel and cohere, instead of giving flavor from the barrel. Lingering and complex, this mezcal shows green chili, ripe guava, barbecue smoke, and roasted artichoke.
